Aim of the WP


Characterization of the key nutraceutical profile and allergenic properties of apple fruit. This objective will be pursued by the following actions:

-          Identification of bioactive molecules and analysis of their roles as modulators of risk factors for dismetabolic diseases and their anti-neoplastic activity. Some of these molecules might be used as functional food components and in therapeutic applications. In addition, this information will allow the definition of the ideal metabolomic profile of apple fruit.

-          Identification of the master determinants of apple allergenicity and search for hypoallergenic apple cultivars. A multiple approach, in silico, in vitro and in vivo, will allow to enlarge the components determining the global allergenic potential and to define the hypoallergenic fruit profile.
